Vegetable Medley

An easy way to get more color into your diet.

Wash and slice any or all of the following list of vegetables:

​

Carrots

Zucchini

Yellow Squash

Green Beans

Broccoli

Kale

Red or green Chard

Peppers 

Garlic

Start with about 2 tablespoons oil in a wok or deep frying pan over high heat. Once hot, add garlic and onion and stir for a few minutes until they are soft. Next add vegetables like carrots, green beans and broccoli that will take the longest to cook. Let them cook for several minutes and add the rest of your vegetables. Stir constantly until all vegetables are soft but not soggy.

Eat plain or add your favorite sauce and serve over rice or noodles. Enjoy! DD
